Truly Kentucky

When Elizabeth & Barry came to visit, they were so sweet to leave us a wonderful taste of home. A cookbook titled, Truly Kentucky, A Culinary Gift from the Bluegrass. It was incredibly thoughtful of them to share it with us and so relevant since I had expressed to E that I wanted to do more cooking from my cookbooks!

A True Treat from the Bluegrass :)


So in honor of Derby week, I decided to make a special dish from the Bluegrass cookbook. Last night we had the Chicken & Spinach with Pasta recipe. It is incredibly easy to make and a cost effective meal.

Ingredients:
9 oz package prewashed spinach
4 skinless, boneless chicken breasts, uncooked
2 Roma tomatoes, sliced
1 cup chopped mushrooms
1.4 oz envelope Italian salad dressing mix
Balsamic vinegar
1 cup shredded mozzarella or Parmesan cheese
1 pound package angel hair pasta or rice, cooked

Directions:

  • Place the spinach in the bottom of a 9x13-inch baking dish
  • Place the chicken breasts on top of the spinach

  • Place the tomatoes and mushrooms on top of the chicken
  • Mix Italian dressing according to directions, substituting the balsamic vinegar for the regular vinegar

  • Pour dressing over the top
  • Top with cheese

  • Bake at 350 degrees for 30 minutes
  • Serve over angel hair pasta or rice

    And viola...

    3. Ohh I like that idea E!!! I would need to start cooking nightly, but it could work!

      Blair, it was very yummy and took about 40 minutes (10 to prep and 30 to cook) :)
